From my understanding, that is because the Traditional Japanese diet is high in plant based foods and alkaline foods.
They tend to mainly eat fish, vegetables, fruit, soy, miso soup, noodles, rice and sea vegetables.
Acidic inflammatory foods such as dairy, red meat and wheat bread, are rarely (if ever) eaten.
Dairy, red meat and wheat bread are all triggers for P.
Of course, the Traditional Japanese diet is slowly being lost to the modern Western SAD diet, and Japan is now seeing diseases that once were rare or non-existent. So yes, I think we have a lot to learn from the East in relation to health.
